Not even chocolate sauce would get Michael to eat broccoli. Our workshop friends have enjoyed it though - one even asked for it at breakfast!

Broccoli Souffle

  1/4 cup chopped onions
  6 tbsps butter
  2 tbsps flour
  1/2 cup water
  1/2 pound "Velveeta" cheese
  2 10 ounce packages frozen chopped broccoli
  3 eggs
  1/2 cup cornflake crumbs

Preheat oven to 350. Grease an 8 inch square baking dish. Sauté onions in 4 tbsps of the butter. Add water gradually to flour, stirring constantly, to make a smooth paste. Add flour paste to onions. Cook over low heat until thick. Blend in cheese, stirring until melted. Add defrosted broccoli. Beat eggs a little and gradually add to broccoli mixture. Pour into prepared pan. Mix crumbs and remaining melted butter. Sprinkle over top. Bake for 40 minutes. Freezes really well. Bake, cook, then cover and freeze.
